- 150 grams prawns (shelled and deveined, optional)
- 1 onion (large, thinly sliced)
- 1 green pepper (thinly sliced)
- 100 grams beans (cut into medium sized strips)
- 3 red chillies
- 4 Tbsp. curry paste (thai, recipe below)
- 2 Tbsp. soy sauce
- 2 Tbsp. fish sauce
- 1 Tbsp. white wine vinegar
- 5 1/2 tsp. sugar
- 4 Tbsp. coconut milk (thick)
- 3 Tbsp. oil
- 4 lemon grass (chopped)
- 2 inches ginger
- 2 cloves garlic
- 4 green chillies
- 1 lime (zest and juice of)
- 5 kaffir lime leaves (if unavailable use zest of another lime)
- 1 bunch coriander (stalks and roots, washed and chopped)
- 1 Tbsp. fish sauce
- 4 Tbsp. coconut milk (thick)
