- 8 skinless chicken thighs (or 6 to 8 drumsticks)
- 1/3 can full fat coconut milk
- 2 Tbsp. vegetable oil
- 1/3 cup chopped onion (purple or white)
- 1 fresh galangal (thumb-sized piece, or ginger, grated or finely chopped)
- 4 cloves garlic (minced)
- 1 Chili (yellow, minced, OR 1 red chili, minced, to taste -- omit for very mild curry)
- 1 cup white wine
- 1 1/2 cups chicken stock
- 2 tsp. fish sauce
- 2 tsp. whole cumin seed
- 3/4 tsp. turmeric
- 3 tsp. ground coriander
- 2 makrut lime leaves (or 3 to 4 bay leaves)
- 2 medium potatoes (chopped into chunks)
- 1 cinnamon stick (or pinch of ground cinnamon, optional)
