- 5 cups baby bok choy (thinly sliced, napa or savoy cabbage would also be terrific)
- 8 radishes (6-, thinly sliced)
- 3 oz. ramen noodles seasoning (1 package, packet discarded and crumbled)
- 1 medium carrot (sliced thinly or shaved with a vegetable peeler)
- 3 green onions (2-, thinly sliced)
- 3 cups cooked chicken (shredded, about 2-, or 2 breasts)
- 1/3 cup sunflower seeds (and/or peanuts)
- peanut sauce (Thai Ginger, , recipe follows)
- grapes (halved tomato, optional)
- bean sprouts (optional)
- cilantro (optional)
- cucumbers (optional)
- jicama (optional)
- 15 oz. light coconut milk (1/2 a can)
- 1/4 cup natural peanut butter (room temperature)
- 3/4 Tbsp. fish sauce
- 2 Tbsp. curry paste (red Thai-style, could use green; I happened to have red on hand)
- 1 Tbsp. honey
- 1/2 tsp. rice vinegar (could use white vinegar)
- 1/2 tsp. lime juice
- 1 tsp. minced ginger
- 1 Tbsp. soy sauce
- 1/2 tsp. sriracha (1/4-, or cayenne, optional)
- chopped cilantro (to taste, optional)
