Description
Blood is bold, a bit bitter—and, frankly, kind of creepy. But we like it—especially in this spicy, delicious Thai noodle soup.
Ingredients

- 2 boneless pork shoulder (<sup>1</sup>⁄<sub>2</sub> lb.)
- 2 oz. rock sugar (Thai, or 1/4 cup granulated sugar)
- 10 cups pork stock (or water)
- 3 light soy sauce (</sup>⁄<sub>4</sub> cup)
- 1 Tbsp. dark soy sauce
- 1 Tbsp. whole black peppercorns
- 10 sprigs cilantro
- 4 bay leaves
- 3 stalks lemongrass (thinly sliced)
- 2 pandan leaves (fresh or frozen)
- 2 stalks celery (Chinese or regular, cut into 3-inch pieces)
- 2 whole star anise
- 1 piece galangal (fresh or frozen, peeled and thinly sliced)
- 1 stick canela
- 3 Tbsp. canola oil
- 3 cloves garlic (minced)
- 10 oz. pork (frozen Thai, balls)
- 10 oz. rice noodles (thin, flat, soaked in warm water for 15 minutes and drained)
- 8 oz. boneless pork shoulder (sliced into 1-inch strips, about 1/8-inch–thick)
- 2 stalks celery (Chinese or regular, leaves and tender stalks roughly chopped)
- 2 oz. spinach (Chinese or regular, stemmed and chopped)
- 1 bean sprouts (<sup>1</sup>⁄<sub>2</sub> cups)
- 4 tsp. blood (pig's or beef)
- 1 cilantro leaves (</sup>⁄<sub>4</sub> cup packed)
- 1 Thai fish sauce (</sup>⁄<sub>4</sub> cup)
- 1 vinegar
- 1/4 cup pickling liquid
- 4 tsp. chile powder
- 4 tsp. granulated sugar
