- 2 stalks lemongrass (cut into 1-2 inch slices)

- 10 kaffir lime leaves (ripped)

- 2 Tbsp. black soy sauce (use gluten-free soy sauce or ¼ cup full-bodied red wine for gluten-free substitution)
- 1 Tbsp. coconut sugar (or palm)
- 1 lb. beef tenderloin (tender cut of, strip steak, etc., sliced against the grain into very thin strips)
- 3 Tbsp. oil (– coconut, palm or peanut)
- 4 cups greens (your choice – spinach, bok choy greens, kale, etc.)
- 1 pkg. rice noodles
