- 3 Tbsp. vegetable oil (divided)
- 2 shallots (large, thinly sliced, 1 cup)
- 1 Tbsp. ginger (finely chopped peeled)
- 1 large garlic clove (minced)
- 1 1/2 tsp. thai green curry paste (or more if you want to kick it up a little)
- 2 cups reduced sodium beef broth
- 1 Tbsp. fresh lime juice (plus extra slices for serving)
- 1 red bell pepper (cut into 1/4-inch strips)
- 1 bunch scallions (trimmed and cut into 3-inch pieces)
- 3/4 lb. egg noodles (dried Asian)
