- 1 shallot (small, chopped)
- 1/2 cup shredded carrots
- 2 baby bok choy (chopped, keep white parts separate from dark leafy green parts)
- 1/2 lb. shrimp (large fresh or frozen, defrosted, peeled, and deveined)
- 1/2 cup fresh Thai basil (or regular basil leaves chopped)
- bean sprouts (Fresh, for garnishing, optional)
