By far, best Texas oven BBQ brisket recipe out there. The cooking methods is outstanding and the ratios on the rub are a good place to start. It has a bit too much paprika for my Texas taste buds, so I like to reduce the paprika by 3/4, reduce the sugar by 1/2, and sub Chihuahuan smoked salt for for Kosher salt. The smoked salt is a bulk item at select HEB grocers. It brings authentic South Texas smoked flavor to any dish.
