- 1/4 cup scallions (thinly sliced)
- 1/2 cup red onion (minced)
- 1 cup crackers (broken salted)
- 2 Tbsp. unsalted butter
- 2 Tbsp. all purpose flour
- 1 cup half-and-half
- 12 oz. beer (amber preferred)
- 2 cups cheddar (grated sharp)
- 1 cup cream cheese
- 2 tsp. worcestershire sauce
- 2 tsp. kosher salt
- 1/2 tsp. dry mustard
- 1/4 tsp. paprika
- 1 pinch cayenne
- 6 fresh ground black pepper (turns)
