- 2 Tbsp. chili powder
- 1 tsp. salt
- 1 tsp. garlic powder
- 2 tsp. oregano
- 1/2 tsp. red pepper flakes (if you like a bit of spice, definitely add these into the mix!, optional)
- 540 mL chickpeas (rinsed)
- 3 cups kale (thinly sliced)
- 1 Tbsp. olive oil (+ 1 tbsp olive oil)
- 1 1/4 cups cheddar cheese (shredded, keep 1/4 cup aside)
- cilantro (for garnish, optional)
