My husband devoured this meal! Unfortunately I had to substitute some items. I did not have corn or white rice so I added a cup and 1/3 of brown rice quinoa mixture that was lefy over from a different recipe. I did not have enchilada sauce, so I used Pace Picante salsa. I will make sure to have the organil ingredients on hand for the next time I make this.
