- 1 Tbsp. extra-virgin olive oil
- 1 red onion (medium, finely chopped)
- 1 green bell pepper (medium, finely chopped)
- 1 clove garlic (minced)
- 1/2 cup black olives (finely chopped)
- 1 can chopped tomatoes (fire-roasted, 15 ounce can, with juice)
- 1 can black beans (drained, 15 ounces)
- 1 can kidney beans (15 ounces, chopped in tiny pieces)
- 2 1/4 Tbsp. brown sugar
- 1 Tbsp. lemon juice
- 1 Tbsp. ground cumin
- 1 pinch ground cayenne
- 1/2 cup chopped cilantro (fresh)
- salt (to taste, I used about 1 teaspoon.)
- 6 burger buns (vegan, I chose a whole wheat variety, but any kind works.)
