  • 14 ounces ground beef
  • 1 slice bread (crumbled)
  • 1 egg
  • 1 pinch paprika
  • 1 pinch chili powder
  • 1 1/2 tablespoons canola oil
  • 2 tablespoons orange marmalade
  • 3 tablespoons ketchup
  • 4 tomatoes (deseeded and diced)
  • 2/3 cup white wine vinegar
  • 3 drops hot sauce
  • 1 head romaine lettuce (torn into bite-sizes)
  • 4 onion (peeled and sliced)
  • 15 ounces sweet corn (drained)
  • 15 ounces red kidney beans (cans, drained and rinsed)
  • 2 1/2 ounces tortilla chips (to serve)

    Directions

    1. Mix ground beef, bread and egg. Add paprika and chili powder and season to taste. Form into meatballs. Heat oil in a frying pan and sauté meatballs for about 3-4 mins until browned. Set aside to cool slightly.
    2. Heat marmalade in a saucepan then add ketchup and diced tomato. Add vinegar and hot sauce and season to taste. Toss with lettuce, onions, corn, beans and meatballs then distribute between serving plates. Serve garnished with tortilla chips.
