- 2 Tbsp. extra-virgin olive oil
- 1 lb. lean ground beef
- 1/2 sweet onion (finely chopped)
- 1 clove garlic (finely chopped)
- 1 Tbsp. chili powder
- 1 tsp. ground cumin
- 30 oz. black beans
- 10 oz. tomatoes (with green chilies)
- salt
- pepper
- 1/2 cup chopped cilantro
- 12 oz. pepper jack cheese (about 3 cups)
- 1 bag corn chips
- sour cream

Directions
- In a Dutch oven, heat olive oil over medium high heat. Add the beef and cook for 7 minutes.
- Add onion, garlic, chili powder, and cumin. Cook over medium low heat for 5 minutes.
- Add the beans (with their liquid) and tomatoes. Bring to simmer. Cook, stirring occasionally, until thick for about 15 minutes. Season with salt and pepper.
- Stir in cilantro, let stand for 5 minutes.
- Serve with cheese, sour cream, and corn chips.
