- 2 tsp. taco seasoning mix (homemade or store-bought)
- 2 bell peppers (any color, sliced into thin strips)
- 1/2 yellow onion (or small white, thinly sliced)
- 2 tsp. minced garlic
- 1 zucchini (small, chopped)
- 1 cup frozen corn (no need to thaw)

- fresh ground black pepper
- 2 Tbsp. chopped fresh cilantro (optional)
