- 3/4 cup soy sauce
- 3/4 cup mirin (rice wine)
- 1/2 cup sugar (white or brown)
- 1 tsp. garlic (finely minced, optional)
- 1 tsp. ginger (finely minced, optional)
- 1 sheet nori (8-inch square, cut with a scissors into 1-inch strips)
- 2 Tbsp. black sesame seeds (or white, or a mixture of both)
- 2 cups sushi rice (short grain rice)
- 2/3 cup seasoned rice vinegar
- 1 cup rice vinegar
- 3 Tbsp. sugar
- 2 tsp. salt
- 20 oz. fresh spinach (washed)
- 1 Tbsp. sesame oil (asian)
- kosher salt
- 1 bunch scallions (washed, trimmed, and sliced crosswise)
- 1 avocado (peeled, pitted and sliced)

Great. Sauce burnt a bit under the broiler so next time will broil and then just bake. Great healthy meal. Made a second time and 5is time I marinaded them salmon in the sauce instead of basting in the oven, used brown rice and just sprinkled with a rice seasoning mix, added edamame. Turned out great

Great recipe! I bought a bag of seasoned seaweed flakes from my local Korean market to sprinkle on top---perfection!

Really easy to put together and it's a beautiful presentation. Will make it again without a doubt. I added edamame for a bit more crunch
