- 1 pineapple (large)
- 1 Tbsp. vegetable oil
- 1 lb. boneless chicken breasts (cut into 1in. pieces)
- 3/4 cup soy sauce
- 1/4 cup honey
- 1/4 cup brown sugar (packed)
- brown rice (or 2 cups white)
- sesame seeds

Directions
- Cut pineapple in half, lengthwise. Use a spoon to scoop out the flesh of each half, leaving about a half-inch on the sides to make sure the pineapple boats are sturdy. Drain the juice & set aside the flesh.
- Heat the oil in a large skillet over high heat. Add the chicken and cook for about 2 minutes.
- Add soy sauce, brown sugar, and honey -- stir to combine.
