- 1 clove garlic (minced)
- 1/2 inch ginger root (peeled and minced or grated)
- 1 cauliflower rice (recipe, ingredients above)
- 1 sweet potatoes (recipe teriyaki)
- 2 cups edamame (shelled cooked, I used frozen & thawed)
- 2 cups corn kernels (cooked, optional, I used frozen & thawed fire-roasted corn)
- 1 avocado (sliced or cubed, see notes)
- 3 green onions (or scallions sliced)
- sesame seeds (for garnish, optional)
- teriyaki sauce (extra, for serving, optional)

This is a little bland to me even though I made my own teriyaki and added extra spices (I think it's just I'm not a big fan of cauliflower rice, will probably make it again in the future with normal rice). The teriyaki sweet potato recipe is 5 stars on its own.

This was very good and healthy. I grated the cauliflower and sauteed it in olive oil, ginger and garlic once I figured out how to navigate the recipe. It's a beautiful dish but my goodness, how many glasses of wine did the author have while writing this? Ha Ha Ha ... you tell me?
