- 1 kg chuck steak (Quality Mark, trimmed and cut into big, 6cm ish chunks)
- 2 cups red wine (or use additional stock)
- 1 onion (chopped)
- 4 cloves garlic (crushed)
- 1 leek (finely chopped, discard the very dark green tops and outer layer)
- 400 grams mushrooms (sliced)
- 1 cup beef stock (low salt)
- 1/2 cup tomato paste
- 1 Tbsp. Dijon mustard
- 2 bay leaves
- 1 1/2 Tbsp. cornflour (mixed with 2 tablespoons water)
- 1 kg potatoes (mashing, peeled and chopped evenly)
- 50 grams butter
- 3/4 cup grated cheddar (or fresh Parmesan cheese)
- 3/4 cup breadcrumbs (tossed with 1 tbsp olive oil)
