- 2 tsp. kecap manis (a thick, syrupy soy sauce available in Asian grocery stores or some large supermarkets)
- 1 tsp. maple syrup
- 1 tsp. garlic powder
- 200 grams tempeh (sliced into 1/4” thick slices)
- olive oil spray
- 1/4 tsp. fennel seeds
- 1 shallot (echalion, or two smaller shallots, peeled and thinly sliced)
- 1 clove garlic (peeled and thinly sliced)
- 1 tsp. capers (drained and chopped)
- 1/2 Tbsp. balsamic vinegar
- 400 grams chopped tomatoes
- 1 Tbsp. tomato puree
- 2 tsp. maple syrup
- 2 Tbsp. chopped fresh parsley
- sea salt
- black pepper
- 1 dried yeast (sachet fast action)
- 600 grams strong white bread flour
- 1 tsp. light brown sugar (soft)
- 1/2 tsp. salt
- 1 clove garlic (smoked, finely chopped)
- 1/2 tsp. dried basil
- 1/2 tsp. dried marjoram
- 1 pinch dried rosemary
- 1 pinch thyme
- 1 pinch sage
- olive oil spray
- polenta (A little, for sprinkling)
- 1 shallot (echalion, or ½ onion, peeled and thinly sliced lengthways)
- 8 cloves garlic (smoked, peeled and thinly sliced)
- 8 tsp. vegan cream cheese (approx, preferably a meltable variety, I used Violife)
- 140 grams pea shoots
- 40 pitted black olives (sliced)
- 3 Tbsp. extra virgin olive oil
- 1 Tbsp. balsamic vinegar
- 1/2 lemon juice
- 1/2 tsp. sea salt
- 1/2 tsp. black pepper
