- 1 chicken (about 3 pounds, cut into 8 pieces, 2 legs, 2 thighs, 2 wings, and 2 breasts)
- 2 qt. buttermilk (preferably whole-milk)
- 3 Tbsp. hot sauce
- 1 Tbsp. freshly ground black pepper (plus 1 teaspoon)
- 1 1/2 lb. chicken skin (cut into 1/2-inch pieces)
- 6 cups flour (preferably Anson Mills White May Flour)
- 1 cup cornmeal (fine, preferably Anson Mills Antebellum Fine White Cornmeal)
- 2 Tbsp. cornstarch
- 1 1/2 tsp. garlic powder
- 1 1/2 tsp. onion powder
- 1/2 tsp. cayenne pepper
- 1/2 tsp. smoked paprika
- 1 cup lard (rendered fresh)
- 1 cup canola oil
- 2 oz. slab bacon (Benton's, diced)
- 2 oz. smoked ham (Benton's, diced)
- 2 Tbsp. unsalted butter
