- 2.7 oz. bread flour (I use King Arthur)
- 12 oz. whole milk
- 1.5 oz. water
- tangzhong (All the, cooled to lukewarm)
- 24.3 oz. bread flour
- 2 large eggs
- 2 tsp. kosher salt
- 7 oz. granulated sugar (you can cut back on this by up to half if you like your bread less sweet)
- 0.25 oz. active dry yeast (double to ½ oz if you want the process to go more quickly)
- 2 lemons (medium)
- 1 tsp. canela
- 1/2 tsp. grated nutmeg (freshly)
- 2 tsp. saffron
- 2.5 oz. boiling water
- 8 oz. unsalted butter (1 cup or 2 sticks, soft but not greasy)
- eggs (either dyed or natural. I used mine raw and they baked in the oven to a perfect "hard boiled")
