- 1 pkg. cream cheese (8 oz. per package, softened)
- 3 large egg yolks
- 2 cans sweetened condensed milk (14 oz. per can)
- 6 Tbsp. grated lime zest (from Key limes or regular limes)
- 1 1/4 cups key lime juice (or lime juice)
- 2 graham cracker crusts (9 inches)
- 2 cups heavy whipping cream
- 1/2 cup confectioners' sugar
- 1 Tbsp. vanilla extract

Directions
- Preheat oven to 325°F. In a KitchenAid Stand Mixer using Flat Beater Accessory, beat cream cheese until smooth. Beat in egg yolks. Beat in sweetened condensed milk, lime zest and lime juice. Pour into crusts.
- Place pies on a baking sheet. Bake until centers are almost set, 22-25 minutes. Cool completely on a wire rack.
- Cover and refrigerate until chilled, 3 hours or overnight.
- For topping, in a clean bowl of a KitchenAid Stand Mixer using the Wire Whip Accessory, beat whipping cream, confectioners’ sugar and vanilla until stiff peaks form; pipe or spread over pies.
- Garnish with lime slices and, if desired, additional lime zest.
