- 2 Tbsp. natural peanut butter
- 1/2 Tbsp. coconut sugar (or brown sugar)
- 2 cloves garlic (minced)
- 1 red chili (seeded and finely chopped, spicy - use less to taste)
- 1 tsp. soy sauce (or tamari for gluten-free)
- fresh lime juice (optional a squeeze of)
- 1/4 cup warm water
- 10 oz. soba noodles (cooked according to package directions, drained, use 100% buckwheat noodles for gluten-free)
- 1 tsp. sesame oil (or neutral oil of choice, such as refined coconut oil)
- 1 red bell peppers (large or 2 small, seeds and pith removed, cut into strips)
- 2 carrots (peeled and thinly sliced)
- sauce (tamarind, see above)
- 3 green onions (sliced)
- 1 head kohlrabi (cut into matchsticks)
- sesame seeds (optional)
- cilantro (optional)
