- 1 onion (large, thinly sliced)
- 200 grams bean sprouts
- 5 dried shiitake mushroom (Soak this in hot water first and slice it thinly. Keep the water for later use.)
- 1 cup chicken stock
- 3/4 cup soy sauce
- 50 grams dried shrimp (soaked in cold water. Keep water for later use.)
- coriander (or Small bunch, for garnish, optional)
- 100 grams pork fillet (thinly sliced)
- 1 packet rice vermicelli (Taiwanese, 400gm)

Simple and suprisingly tasty. I used chicken instead of pork and added a few pepper flakes for heat.
