- 1 onion (medium, roughly chopped)

- 1 ginger (sliced)
- 5 green onions (cut into 3″ length)
- 1 large carrots (roughly chopped)
- 1 tsp. black peppercorns (whole)
- 1 star anise
- 1 cinnamon stick
- 2 bay leaves
- water (to almost cover the bones (about 13 cups))
- 3 lb. beef chuck (1 1/2″ cubed)
- 1 onion (medium, roughly chopped)
- 4 garlic cloves (bruised)
- 3/4 inch ginger (sliced)
- 3 green onions
- 3 whole dried red chilies
- 1 daikon (large, cut into 1″ thick)
- 3/4 cup soy sauce
- 1/2 cup soy paste
- 1/2 cup tomato paste
- 1/4 cup tofu (fermented)
- 4 Tbsp. black bean sauce (chili, more or less depending on how spicy you want)
- 2 Tbsp. brown sugar
- 1 Tbsp. caramel sauce (thick, optional for color)
- 3 cups water
- salt (pepper and sugar to taste)
- 1 whole star anise
- 1 tsp. fennel seeds
- 1 tsp. cumin seeds
- 1 1/2 tsp. black peppercorns
- 1 Tbsp. cinnamon (chips (cassia))
- 1 Tbsp. cinnamon stick ((ceylon))
- 2 whole cloves
- 1/2 tsp. five spice powder
- 1 tsp. coriander seed
- 2 bay leaves
- 3 lb. noodles (cooked according to package directions)
