- 100 grams shallots (Indonesian: bawang merah)
- 2 cloves garlic (Indonesian: bawang putih)
- 8 chili peppers (red cayenne, Indonesian: cabe merah keriting)
- 1 inch ginger (Indonesian: jahe)
- 1 inch galangal (Indonesian: lengkuas)
- 5 candlenuts (Indonesian: kemiri, or macadamia)
- 1 tsp. shrimp paste (Indonesian: terasi, toasted)
- 3 Tbsp. oil
- 1 Tbsp. tamarind (liquid, 1 teaspoon tamarind + 1 tablespoon water)
- 1 lemongrass (Indonesian: sereh, bruised and knotted)
- 2 Indonesian bay leaves (Indonesian: daun salam, optional)
- 2 kaffir lime leaves (Indonesian: daun jeruk)
- 1/2 tsp. salt
- 1 1/2 tsp. coconut palm sugar (Indonesian: gula Jawa)
