- 7 oz. chipotles in adobo
- 4 cups fresh pineapple (diced)
- 1 cup chopped red onion
- 8 cloves garlic
- 4 Tbsp. fresh lime juice
- 2 Tbsp. apple cider vinegar
- 24 oz. Mexican beer
- 1/2 pineapple (chopped into fairly small pieces)
- 1/2 small red onion (finely diced)
- 1 jalapeno (seeded and diced)
- 1/4 cup chopped cilantro
- 1 pinch salt (or to taste)
- 1 tomato (chopped)
- 1/2 cup mayonnaise
- 1/3 cup sour cream (or Greek yogurt)
- 1/2 lime (juice of)
- 1 tsp. chipotle chile powder (or ancho chile powder)
- tortillas (for tacos, your preference)
- tortilla chips (for nachos, your preference)
- cheese (grated, about 2 cups for nachos)
- cilantro (Scallions, Shredded Cabbage for garnish, optional)
