- 1 whole beef tongue (about 3 to 4 pounds cut into 2 to 3 pieces, ask the butcher or do it yourself)
- 1 head garlic (outer dry peel removed split in half horizontally)
- 1 white onion (outer peel removed, split in half horizontally)
- 5 whole bay leaves (dried)
- 15 black peppercorns
- 1 tsp. dried marjoram
- 1 tsp. dried thyme
- 1 tsp. dried oregano
- 1 Tbsp. coarse sea salt (or kosher, plus more for seasoning)
- freshly ground black pepper (To taste)
- 2 tsp. vegetable oil
- 1/2 cup white onion (finely chopped, divided, 1/4 for cooking with the meat and 1/4 to reserve for garnish, optional)
- 1/4 cup fresh cilantro leaves (and upper part of stems coarsely chopped)
- 1 batch salsa verde (Cooked)
- 1 lime (cut in quarters, optional garnish)
- 12 corn tortillas

This is an amazing recipe, very authentic. I served it to a crowd of people who thought they wouldn’t like “tongue”. They are now asking for it again. I cooked a larger size tongue in the crockpot overnight, so the consistency was more like shredded beef vs cubed.(more “wet”). The second time I made this, it was more like the written recipe. I almost prefer the “wet” method. I served it with grilled corn tortillas, cilantro, guacamole, radish, tomatillo sauce, onion, and cauliflower rice and refried beans. It was “deelish”! It does need an acid, ie lime juice or the tomatillo sauce on top.
