For a tater tot casserole, this is definitely 5 stars. The only things I did different was substitute sour cream for enchilada sauce at the end because I didn’t have any and use ground chicken instead of beef to lighten it up. Still very delicious even if it may have potentially been missing flavor from the lack of enchilada sauce. Putting the cheese and salsa/sour cream mixture on at the end kept the tater tots crunchy and whole.
This was also quick and easy to make. It is a great weeknight dish that I will make again .

Awesome! All 4 of my kids loved this meal! This recipe will definitely be put into the dinner rotation!

It was good enough to make again (and very easy) I omitted the last step of covering the tots with salsa because I prefer them crunchy.
