- 2 lb. ground beef
- 1 sweet onion (medium, diced)
- 4 cloves garlic (minced)
- 1/2 green bell pepper (chopped)
- 1/2 red bell pepper (chopped)
- 8 oz. tomato sauce (1 can)
- 1 can lime (diced Mexican-style, and Cilantro Tomatoes or regular diced tomatoes)
- 1 can diced green chilies (4.5 oz)
- 1 lime (Juice and zest of)
- 1 packet taco seasoning mix (1oz, or 2 tablespoons taco seasoning mix)
- 1 can black beans (15.5oz, rinsed and drained)
- 1 can pink beans (15.5oz, rinsed and drained)
- 1 can whole kernel corn (15.5oz, drained, optional)
- 3 cups beef broth (2 1/2 -, adjust based on how thick you want the soup)
- 1/4 tsp. ground black pepper (or to taste)
- 1/2 tsp. kosher salt (or to taste)
