- 1 Tbsp. ranch seasoning mix (see above)
- 1/2 cup whole milk plain Greek yogurt (I used Stonyfield)
- 1/2 cup plain yogurt (whole milk, I used Stonyfield)
- 2 Tbsp. adobo sauce (from canned chipotle in adobo, depending how spicy you like it)
- 1 lb. ground turkey (chicken, or beef)
- 2 Tbsp. tomato paste
- 1 Tbsp. chili powder
- 1 tsp. dried oregano
- 1 tsp. paprika
- 1/2 tsp. kosher salt
- 1/2 tsp. garlic powder
- 1/2 tsp. onion powder
- 3/4 cup water
- 2 cups baby arugula
- 1/4 cup shredded cheddar cheese
- 3/4 cup canned corn (drained)
- 3/4 cup corn tortilla chips (crushed)
- 1/2 cup cherry tomatoes (chopped)
- 1/4 cup purple cabbage (shredded)
- 1/4 cup radishes (thinly sliced)
- 1/4 cup red onion (thinly sliced)
- 1/4 cup shredded carrots
- 1 avocado (peeled, pitted, and chopped)
