- 1 lb. chicken (cooked and cubed, OR 1 lb. hamburger meat, cooked)
- 4 cups kidney (pinto, or black beans, cooked and drained, this is equivalent roughly to 2 16 oz. cans)
- 4 Tbsp. taco seasoning mix (see recipe below)
- 1 cup water (add more, if needed)
- 16 oz. whole kernel corn (1 can)
- 1 cup shredded cheese (fiesta style)
- 2 heads romaine lettuce (1- ,chopped)
- 4 tomatoes (2- ,chopped)
- salsa (homemade or store bought)
- olives (sliced, optional)
- cilantro (washed and chopped, optional)
- guacamole (optional)
- sour cream (or Greek Yogurt, optional)
- red onions (or Green, chopped, optional)
- ranch dressing (optional)
- lime wedges (for sprinkling juice over the top)
- corn tortilla chips
- 1/4 cup minced onions (dried)
- 4 tsp. cornstarch
- 3 Tbsp. salt
- 4 Tbsp. chili powder
- 3 tsp. cumin
- 1 tsp. oregano (dried)
- 1/2 tsp. marjoram (dried, can use oregano flakes here)
- 3 tsp. garlic powder
- 3 tsp. crushed red pepper
- 2 tsp. chicken bouillon (can also use beef)
