- brown rice (Cook, with boiling water until all water has been soaked up and dissolved. Around 15-20 minutes.)
- 2 cups brown rice (uncooked)
- 4 cups boiling water
- 4 tomatoes (large, chopped / or can either use cherry tomatoes cut in ¼)
- 2 handfuls mint (and parsley, whole and chopped into small pieces)
- 1/2 cucumber (or one courgette chopped finely, can add both)
- 1/4 cup olive oil
- 1/4 cup lemon juice (one or two lemons)
- 1 tsp. mustard seeds (wholemeal)
- salt
- pepper
