- 20 oz. crushed pineapple (“UNDRAINED”)
- 2 boxes pudding mix
- 8 oz. sour cream
- 1 graham cracker crust (Extra serving sized, I like to make my own 10” pie pan or 9” deep dish)
- 8 oz. pineapple slices
- 8 maraschino cherries (or more if you like them)
- 1/2 cup sweetened flaked coconut (optional)
- 8 oz. cool whip (divided)

Directions
- 1. In a large bowl, combine crushed pineapple ‘with’ its syrup, dry pudding mix, and sour cream; mix until well combined.
- 2. Fold in ~1/2 of the container of cool whip.
- 3. Put mixture into pie crust

OMG this is soooo good! EASY to make and the taste is out of this world. I will make this even when I have nothing to make a pie crust with -- I eat it as a pudding. Will make again!
Variation:
Pina Colada Salad
1 (20 ounce) can crushed pineapple in juice
1 (3 ounce) package instant coconut cream pudding mix
1⁄2 cup flaked coconut
1 (8 ounce) container Cool Whip
3 ounces cream cheese
1⁄3 cup white sugar
DIRECTIONS
Mix crushed pineapple with juice, instant pudding mix and coconut.
Fold in Cool Whip.
Cream together cream cheese and sugar in separate bowl.
Then fold into other mixture; chill.
