- 300 grams penne pasta
- 4 tomatoes
- 2 garlic cloves (chopped)
- basil leaves (chopped)
- mascarpone
- 1 tsp. chili powder (or less if you don’t like spicy food)
- 2 Tbsp. Parmesan cheese
- black pepper
- salt
- olive oil

Directions
- 1. Boil a large pot of water. Salt the water to taste and bring it to a full boil. Submerge the tomatoes in the boiling water. When you can see that the skin is coming off remove the tomatoes with a slotted spoon. Peel away the skin.
- 2. Use the same water to cook the pasta.
- 3. Heat the oil in a large pan and add garlic. Fry for 1-2 minutes and add the blanched tomatoes, season well with salt, black pepper. Cook for another 5 minutes on a low heat.
