- 1/2 tsp. ground white pepper
- 1/8 tsp. fine sea salt
- 1/4 cup garlic oil (from frying the garlic)
- 1/4 cup toasted sesame oil
- 1 Tbsp. chili powder (togarashi)
- 1 tsp. chili flakes
- 1/2 tsp. black sesame seeds
- 1/2 tsp. ground coriander
- 5 cups chicken stock (1180 grams/ml, see note*)
- 1/4 onion (medium-size, peeled)
- 1 1/4 cups unsweetened soymilk (unflavoured, see note**)
- 2 Tbsp. dashi (bonito, granules, this is what gives it the bonito-flavour so don't skip!)
- 2 tsp. sea salt
- 4 ramen noodles (servings of)
- 4 soft-boiled eggs
- 1 cup scallions (finely diced, green parts only)
- 1 sheet nori (Japanese dried, /seaweed)
