- 4 cups chicken broth
- 8 oz. rice noodles (/bee hoon or cellophane noodles, or even flat rice noodles/ kwe tiau or angel hair pasta/spaghetti noodles if you prefer)
- 1 cup coconut milk
- 1 inch ginger root (piece of, peeled and finely chopped)
- 2 Tbsp. fish sauce
- 1 tsp. sugar
- 1 tsp. turmeric powder (good-quality)
- 1 tsp. tamarind paste
- 1 lime
- 8 oz. vegetables (green, such as baby bok choy or choy sum)
- 1/4 cup cilantro leaves (chopped)
- 2 red chilis (seeded if you like and finely chopped)
