- 4 chicken thighs (deboned, or two chicken breasts)
- 1 Tbsp. tomato paste
- 1 1/2 Tbsp. spice (THAI 7-)
- 2 cups chicken stock (good quality, preferably fresh stock)
- 400 mL coconut milk
- 2 cms fresh ginger (piece of, cut into 4 slices)
- 1 Tbsp. light brown sugar (or palm sugar if you have it)
- 1 Tbsp. Thai fish sauce
- 2 Tbsp. freshly squeezed lime juice
- 1 handful coriander (stems removed & roughly chopped)
- soy sauce (to taste)
- 2 squares asian noodles
- spring onions (TO GARNISH: finely sliced, / mint & basil leaves / bean sprouts / red chilli, optional)
