- 1/2 cup cilantro
- 1/2 cup lime juice (about 3-4 limes)

I had leftover white and oyster mushrooms and fresh chard from the garden so this recipe was perfect. I did add ingredients and wasn’t able to make the sunflower sauce in time but it still turned out fabulous! I added a handful of Trader Joe’s roasted corn and made an easy homemade spicy enchilada sauce. Threw in a lil pepper jack cheese inside and some on top along with olives and green onion. The radishes are a perfect topping that I never would have thought of as it adds a nice crunch. Put a dollop of 2% plain yogurt and some guac and dug in! Great recipe! Thank you! I’ll definitely try the sauce next time.
