- 3 Tbsp. tahini
- 3 cloves garlic
- 1 1/2 limes (juiced)
- 1 Tbsp. coriander seeds
- 1/2 Tbsp. cumin seeds
- 3 cups chard (loosely packed, leaves, stems removed, blanched, measure before blanching, and patted dry)
- 2 cups lentils (cooked, I used green lentils)
- 1/3 cup cilantro leaves (loosely packed fresh)
- 1/2 tsp. paprika
- 1/4 tsp. ground cumin
- salt
- freshly ground black pepper
- chard (pickled, stems, to serve, optional, recipe below)
- nectarines (optional)
- apricots (optional)
- 1 bunch Swiss chard (chopped)
- cumin seeds
- peppercorns
- cloves
- 1/2 tsp. fennel seeds
- anise seeds
- coriander seeds
- 1/3 cup white vinegar
- 2 Tbsp. sugar (choice, I used coconut sugar)
- 1/4 tsp. salt (+ more to taste)

Unique and flavorful! Beet greens and stems worked well in place of chard. I substituted a cup of chickpeas for half the lentils to lighten the color but will try as written next time. Will skip drying the leaves and lentils since I had to add back a decent amount of water in the food processor to thin it out to a hummus consistency. The hummus and pickled stems were awesome on a waffle for a strange and savory breakfast.
