- 1 bunch kale (the more the merrier! stems removed, washed, squeezed dry, and torn in small pieces)
- 2 sweet potatoes (peeled and cut in cubes)
- apple (Honeycrisp or the like)
- goat cheese
- roasted almonds (chopped, get fancy and do them yourself, or just be like me and use the lazy pre-roasted and slivered ones)
- olive oil
- salt
- pepper
- 1 Tbsp. lemon juice
- 2 tsp. mustard powder
- 1 Tbsp. apple cider vinegar
- 5 tsp. honey (or maple syrup)
