  • 400 grams red bell peppers (roasted or packed naturally, peeled and chopped)
  • 200 grams sugar (or 110 gr. agave syrup)
  • 100 grams apple cider vinegar
  • 50 grams water

    Directions

    1. In a pot, add the bell peppers, sugar, vinegar, and water, and heat on medium heat. Simmer for 30 minutes.
    2. Optionally, at the end you can mash everything together for a less chunky texture.
    3. To can the jam, boil the glass containers 30 minutes, and then let them completely drain on a clean drainboard.
    4. Ladle the jam into the glasses, and add them back into the boiling water another 30 minutes making sure the water does not cover the top.
    5. Remove from water, add the lid, and place them upside down to cool.
