- 2 tsp. refined coconut oil (or light flavored olive oil)
- 3 bell peppers (large, sliced into thin strips, I used 2 red peppers and 1 green pepper.)
- 1 yellow onion (large, sliced into thin strips)
- 2 cloves garlic (very thinly sliced)
- 1/4 tsp. kosher salt
- 20 oz. pineapple chunks (packed in juice not syrup, drained with juice reserved)
- 3/4 cup chicken broth
- 2 Tbsp. soy sauce
- 3 Tbsp. Sriracha hot sauce (depending on heat preference)
- 1 tsp. toasted sesame oil
- 1 1/2 tsp. arrowroot starch (or cornstarch)
