  • 3 bell peppers (large, sliced into thin strips, I used 2 red peppers and 1 green pepper.)
  • 1 yellow onion (large, sliced into thin strips)
  • 2 cloves garlic (very thinly sliced)
  • 1/4 teaspoon kosher salt
  • 20 ounces pineapple chunks (packed in juice not syrup, drained with juice reserved)
  • 3/4 cup chicken broth
  • 2 tablespoons soy sauce
  • 3 tablespoons Sriracha hot sauce (depending on heat preference)
  • 1 teaspoon toasted sesame oil
  • 1 1/2 teaspoons arrowroot starch (or cornstarch)
