This was delicious! I never had eggplant cooked other than fried so I wasn’t sure if it was going to be a super soft dish or not so I fried tofu on the side and added it into the dish last omg amazing 🙌🏽🙌🏽🙌🏽🙌🏽🙌🏽

Wow real good, added at a little peanut powder. Also I didn't have brown sugar so added the sweet chili sauce I had. Real easy and good. No one with peanut allergies in my house, may I add.

Great recipe. Did 1.5x the amount of sauce (double the garlic & cayenne) and it was perfect! My bf suggested to add pineapple which I was unsure of but it was soooo good. Added that in at the same time as the sauce. Ate it over rice and it made 4 servings.

Sweet and Sour Eggplant is our new favorite dish. This receipe is a keeper. On the second try we did double the batch and created for times the amount of sauce, recomend to double the sauce on the orginal receipe. . Very good.

Very good. I made it per instructions except I did double the garlic and served over SORGHUM. We thoroughly enjoyed this dish and I will definitely make this again except I'll try honey instead of brown sugar and maybe add a little less sweetener as I found it a little sweet for my taste. My
dinner partner felt that it was perfect! :)
