- 450 grams boneless skinless chicken thighs (or breasts, cut to 1-inch, 2-cm pieces)
- 1 Tbsp. vegetable oil
- 1 egg (beaten)
- 1/2 tsp. salt
- 1/2 cup cornstarch
- 2 Tbsp. ketchup (or Sriracha for some heat, I used Sriracha)
- 2 Tbsp. rice vinegar
- 2 Tbsp. dark soy sauce
- 3 Tbsp. brown sugar
- 2 Tbsp. water
- 1/2 Tbsp. cornstarch
- 1/3 cup vegetable oil
- 4 cloves garlic (minced)
- 1 inch ginger (minced)
- 1 red onion (medium, chopped)
- 150 grams cremini (or bottom mushrooms, quartered)
- 1 bell pepper (chopped, I used a mix of colors in this recipe)
