- 5 Tbsp. teriyaki sauce
- 15 oz. tofu (– pressed to remove excess water and cut in half lengthwise)
- 4 cups cooked brown rice (– follow directions on package)
- 20 oz. pineapple chunks (packed in pineapple juice – reserve the juice for a marinade)
- 1 Orange (– approximately ¼ cup)
- 1 head broccoli (– remove stem and break into florets)
- 1 head bok choy (– coarsely chopped)
- 1 yellow bell pepper (– seeded and coarsely chopped)
- 2 green onions (– chopped)
- 1 tsp. teriyaki sauce
- 1 clove garlic (– minced)
- 13 oz. light coconut milk
- 1 Tbsp. Sriracha (– NOTE: Start with a teaspoon and add and taste as you go if you don’t like spicy food.)
- 2 Tbsp. reduced sodium soy sauce
- 2 tsp. Chinese 5 spice
- 3 Tbsp. pineapple orange juice
