Made this is Morning with left over uncooked sweet potatoes. I have 9 yr old twins who refuse to eat sweet potato’s. They ate it all before asking what it was, I add a small amount of ketchup to the top of each egg before serving. The old thing I did different is I added a tps of butter to onions while frying to make them sweet.
