  • 1 1/2 lb. sweet potato (peeled and cut into pieces)
  • 1 cup coconut milk
  • 1 cup vegetable stock (can sub chicken if you're not vegetarian)
  • 19.8 oz. basmati rice (Veetee Dine In)
  • 1 cup toasted cashews (can sub almonds)
  • 2 baby spinach (good handfuls)
