- 4 cups sweet potato (cubed, peeled or unpeeled, about 2 medium sweet potatoes)
- 2 tsp. olive oil
- 4 cups curly kale (chopped)
- 1 red pepper (large, diced)
- 1/4 cup diced red onion
- salt
- black pepper
- 1/4 cup roasted pumpkin seeds (1/4 cup, optional)
- 1/3 cup Tahini
- 7 Tbsp. water
- 1/2 tsp. curry powder (feel free to use more if you like!)
- 1 clove garlic (minced)
- 1/2 lemon
- 1/4 tsp. salt
